A. Fry pans with a high ferrous content in the base. Non-stick fry pans are suitable for use on an induction hob but great care must be taken not to “over heat” the pan as this can result in noxious fumes being given off by the non-stick coating. A non-stick pan must never be left on an induction hob with nothing in it.
The most effective pans for use on induction hobs are un-coated stainless steel fry pans that have been “seasoned” or “proved”.

A. Cookware sold for use in a domestic kitchen will not withstand the vigorous use inflicted on pans in a catering environment. It is always advisable to use catering quality cookware from a reputable manufacturer.
